This coffee comes from the Santa Mónica farm, where it was grown by Jairo Arcila. It underwent a 72-hour dry anaerobic fermentation with the pulp intact. During this process, fruits and yeasts were added. Afterward, the cherries were pulped and dried on raised beds, interspersed with peaches between the coffee until the ideal moisture level was reached. This microlot is 100% Castillo variety.
