Grown by Jairo Arcila at the Santa Mónica farm, this coffee underwent a 72-hour dry anaerobic fermentation with the pulp intact. During fermentation, fruits and yeasts were added. The cherries were then pulped and dried on raised beds interspersed with peaches until they reached optimal moisture content. This microlot is 100% Castillo variety.
