  • 20 grams of ground coffee (for espresso)
  • 10 grams of cocoa powder
  • Espresso machine
  • Precision scale
  • Tamper
  • Milk frother
  • Whipped cream

Steps to Prepare a Swiss Mocha

1. Preheat the Mug

Fill the cup with hot water and let it sit for a few seconds to better retain the temperature of the drink.

2. Prepare the coffee

  • Measure 20 grams of ground coffee using a scale for greater accuracy.
  • Place the coffee in the portafilter and tamp down until it is level.

3. Extract the Double Espresso

  • Position the cup under the nozzles of the espresso machine.
  • Start the extraction for 25-35 seconds.
  • Get between 40 and 50 grams of espresso with a uniform golden crema.

4. Mix the cocoa with the espresso

  • Add 10 grams of cocoa powder to the cup.
  • Pour the hot espresso over the cocoa and mix well until smooth.

5. Froth the Milk

  • Fill the milk jug halfway with cold milk.
  • Use the steam wand to heat and froth the milk, aiming for a creamy and uniform texture.
  • Stop the process when the milk reaches a temperature of 60-65 °C.

6. Assemble the Drink

  • Pour the frothed milk over the coffee and cocoa mixture, leaving space at the top.
  • Add a generous layer of whipped cream to finish.

7. Decorate (Optional)

  • Sprinkle cocoa powder or place chocolate flakes on top of the cream to give it a special touch.

Key Tips

  1. Quality cocoa: Use pure cocoa to enhance the chocolate flavor without adding excess sweetness.
  2. Milk texture: Achieve a uniform microfoam, without large bubbles.
  3. Suitable temperature: Make sure the milk is warm but not too hot to maintain its natural sweetness.
  4. Fresh coffee: Grind the coffee beans just before brewing for a more aromatic espresso.
